I got the day off work today, which gave me more time to do my laundry, file my taxes, get a manicure, and of course spend quality time getting creative in the kitchen with my EDM and heavy metal music keeping me within my zen, (yes I know what you’re thinking, how therapeutic right?) Anyways this recipe was simple and delicious and it’s definitely a must try. Now i’m going to take a nap 🙂
Recipe: serves 2
1 sweet potato
1Lb salmon
1/8 tsp cayenne pepper
1/4 tsp all spice blend (spices of choice)
A dash of salt and pepper to taste
Extra virgin olive oil
Preheat oven to 400 degrees F.
Slice sweet potato into medium sized circles and season with a dash of garlic salt, black pepper and olive oil.
Place sweet potatoes on a baking sheet lined with parchment paper and bake for 15-20 minutes, flipping both sides half way through.
When potatoes are ready, set aside and change the oven settings to broil.
Season salmon with spices and a dash of olive oil and slice the salmon into small cubes.
Place salmon on a baking sheet lined with parchment paper and place it in the oven. Let salmon broil for 10-12 minutes until both sides are golden brown (flip salmon half way through).
When ready, make your stack and layer with vegetables of choice.
