an you get any more Paleolithic than this? Probably, but this is as close to a caveman diet as I will get, well for now at least 🙂 This recipe is loaded with protein, vitamins, healthy fats, and is low in carbohydrates. It is also loaded with flavour and deliciousness 🙂
Recipe:
I medium sized organic eggplant
1 large organic cage free egg white
1Lb tilapia fillet
Mrs dash salt free all spice blend (or spices of choice).
1/4 tsp smokey paprika
1/2 tsp organic extra virgin olive oil (for tilapia), and another 1/2 tsp for sautéing the eggplant)
First, set your oven to broil and let it preheat.
Season your tilapia with mrs dash, smokey paprika and olive oil, and place on a baking sheet lined with parchment or foil paper (you can also grease the baking sheet with a little bit of oil if you prefer).
Place tilapia in the oven and broil for 10 minutes, flipping both sides half way through.
While your tilapia is in the oven, prepare your eggplant. Slice eggplant into thick round circles and set aside.
Place egg white in a medium bowl and season with some sea salt and black pepper. Next, heat up your skillet with olive oil over medium heat.
Place sliced egg plant circles in the egg white mixture and evenly coat both sides before placing them in the skillet. Fry both sides for about 10 seconds each and repeat the process for all the egg plant circles.
When tilapia and egg plant are ready, make your stack and enjoy! Layer with additional vegetables if you prefer.
