STRAWBERRY GREEK YOGURT BANANA BREAD

Banana bread! Aka “birthday bread” 😉 This isn’t for me (and that’s a first), instead I made it for my friend as a birthday treat. I know I know I should have baked a cake bla bla bla, but traditional routines get boring. Plus, this is more practical because she can enjoy this healthy treat for breakfast, or as a yummy snack! And trust me, you won’t get that luxury with cake, well at least your waistline won’t 🙂

Plus, knowing my friend Katherine, she loves bananas, strawberries, and yogurt! So why not bring three of her favourite things together and make it into one awesome tasty miracle?

I purposely didn’t mash the bananas into a smooth batter because I personally enjoy the chunky surprise in every bite (yes, i’m a banana lover too!)

Recipe: serves 14-15

Dry ingredients:

1 3/4 cup gluten free oat flour
1 tsp gluten/aluminum free baking powder
1/2 tsp gluten/aluminum free baking soda
1/2 tsp sea salt

Wet ingredients:

1/2 cup organic coconut palm sugar
1/2 cup organic non fat plain greek yogurt
4 small organic ripe bananas, or 3 large ones, (mashed)
2 organic cage free eggs
1 tsp organic pure vanilla extract
1 cup organic strawberries (sliced)

Preheat oven to 350°F.

Mix dry ingredients in a large bowl and set aside.

Next, mix wet ingredients in a separate bowl.

Combine wet ingredients into dry ingredients and mix until well incorporated.

Pour batter into a non stick lightly greased baking bread pan (9/5 inches)

Bake for 45 minutes or until it passes the toothpick test.

When ready, let it cool for 10-15 minutes before serving.

UPDATE: She loved it!!! And so did her grandmother, apparently she cried tears of joy when she ate a slice. She loved it so much she took a picture and posted it on her instagram page 🙂 Mission accomplished!
