When chicken parmesan and pizza meet for the first time and hit it off, they become Chicken Parmesan Pizza buddies.
I never get tired of making pizza, especially when I make them healthy. This pizza however was just perfection. I recorded and the step by step process on my Snapchat and it occurred to me that I should also be posting my videos on here and on YouTube as well!
So while I work on that process, please excuse my low resolution description photos:
When you mix your pizza dough in a mixer, place the dough in a bowl and cover with saran wrap. Let it double in size in room temperature for 2 hours.
Place parchment paper on a pizza pan and sprinkle some flour on the pan and a rolling pin. Roll out the pizza dough until all the edges are covered and brush some olive oil on the dough.
Next, top with marinara sauce. After all behind every chicken parmesan is the marinara sauce right? 🙂
Top the pizza dough with cooked chicken and toppings of choice.
Top with fresh parmesan and other cheese blend. Place the pizza in the oven and bake for 11-13 minutes or until the edges of the crust are golden brown.
Viola! your Chicken Parmesan Pizza is ready for consumption.
Ingredients:
Homemade pizza dough
1 cup marinara sauce
2 sliced cooked chicken breasts (boneless and skinless)
1 cup shredded parmesan cheese
1 cup shredded mozzarella cheese
½ cup cheddar cheese (optional)
1 cup cooked spinach
½ cup sliced onions
1 cup sliced grape tomatoes
2 sliced jalapeno peppers
Fresh oregano, for topping
Directions:
1. When your dough, chicken and spinach are ready to use, preheat oven to 450°F and line a pizza baking pan with parchment paper.
2. Sprinkle flour on a rolling pin and roll out pizza dough on a pizza baking pan until all edges are covered. Brush the dough with some olive oil and add all the toppings except oregano.
3. Place the pizza in the oven and bake for 11-13 minutes or until the edges of the crust are golden brown.
4. Top with fresh oregano and serve.
