My friend whom I haven’t seen in ages is coming over to rant about her dating crisis, so I thought i’d make her these to cheer her up! Also these are healthy, so she won’t feel too guilty 😉 Plus how can you say no to red velvet?
This recipe is sugar free and dye free! Yup that’s right, no food colouring! For paleo, you can substitute the greek yogurt for coconut yogurt/milk.
Recipe: makes 6
Dry Ingredients:
2 cups almond flour
4 organic sweet leaf stevia sachets (or 1/4 cup coconut palm sugar, but they won’t be sugar free)
1 tsp gluten/aluminum free baking powder
1/4 tsp sea salt
1/4 tsp nutmeg
Wet Ingredients:
2 tbsp organic unsweetened apple sauce
1/2 cup fat free plain greek yogurt (or coconut cream)
1/2 an organic banana (mashed)
1 tsp organic pure vanilla extract
1 organic cage free egg
1 organic medium beet (steamed and puréed)
Topping:
1/2 an organic frozen banana
1/4 cup fat free plain greek yogurt (or coconut cream)
1 stevia sachet
Pre-heat oven to 350°F.
Mix wet and dry ingredients in two separate bowls before bringing both mixtures together to form batter. Add pureed beets until a red colour consistency is attained. You can use more or leas depending on how much you want, and also taste your batter and feel free to add more sweetener if you prefer.
Grease your doughnut pan (coconut oil or spray works). Scoop batter into a piping bag or a ziplock bag with the tip cut off and evenly distribute batter into the pan.
Place doughnuts in the pre-heated oven and bake for 10-15 minutes or until it passes the toothpick test.
When ready, gently flip doughnuts on wax/parchment paper and let it cool for 10 minutes.
Place banana, greek yogurt, and stevia in a food processor and puree until smooth. Place frosting in a pipping bag or a ziplock bag with the tip cut off and glaze your doughnuts.
Devour when ready and let your tastebuds take you to red velvet heaven!
