I have a serious love affair with plantains, so much that I could eat them every single day! But since variety is indeed the spice of life, I always incorporate a variety of healthy meals in my diet so I don’t get bored! But here are some plantains for ya 😉
Recipe:
1 small ripe plantain
1/8 tsp cardamom
1 organic cage free egg
Half an organic avocado
A handful of organic field veggies, onions, cucumber and red bell pepper slices
Organic virgin coconut oil (for frying)
Salt and pepper to taste
Peel and slice plantains and set aside. place 1 tsp of coconut oil in a skillet over medium heat and fry plantains for a little less than minute, flipping both sides. The plantains brown rather quickly especially when they are very ripe, so be cautious to so they don’t burn.
When ready, transfer plantains into a place and immediately sprinkle cardamom on them. I find that the cardamom flavour absorbs a lot better while the plantains are fresh out of the skillet. Sprinkle a dash of salt and pepper after they’ve cooled off a little bit.
Layer plantains with veggies and top with remaining toppings and fried egg

I’ve been totally addicted to plantains lately, too! I like to fry mine in some grass fed ghee. The cardamom sounds like a nice edition. I’ll give it a try.
