Hey ya’ll! Buns for anyone? I’m not having the greatest day today but a girl’s still gotta eat right? Anyways making these cheered me up a little because they were delicious! Swap the high carb bread burger buns for these flour free and low calorie (I assume, I don’t count lol) cauliflower buns!
Recipe: makes 4 mini buns
2 cups riced cauliflower
2 organic cage free eggs
Sea salt and pepper to taste
1/2 tsp dried thyme (optional)
Preheat oven to 350°F.
To make cauliflower rice, place 3/4 of a cauliflower head into small pieces and place in a food processor (without the stem). Puree in food processor until a rice texture forms.
Place cauliflower rice in a large bowl and microwave for 2 minutes. When ready, stir cauliflower and place back in the microwave for another 2 minutes.
Place cauliflower in a 3 layered paper towel sheet to squeeze out the excess moisture, this step is important because you don’t want a runny batter.
Place drained cauliflower back in the bowl and add in eggs, salt, and pepper. Mix until a semi thick batter forms.
Line a baking sheet with parchment paper and spoon in mixture to create 4 mini circles.
Bake for 19 minutes, flipping sides half way through.
When ready, remove buns from the oven and let them cool for 10 minutes before serving.

Really interested to try these! My brother is gluten-free and gf products from the store can be so expensive. What is the texture like for these? Is it bread-like?
Ugh I couldn’t agree with you more on how expensive gluten free products are, particularly gluten free bread! Plus they have a very bland taste 🙁 These have a pancake like texture but slightly thicker, and they pair great with any patties of choice, especially salmon or even shrimp! 🙂

OMG!! I just want to tell you Valerie that I just made these! they are soooo good! what a great option to make any kind of patties with out the added calories of regular bread and you are actually eating a vegetable! I’m still in shock! haha THANk youuu !!

Do you need to eat them right away ? Or could I make extra refrigerate then reheat in toaster?
You absolutely can! They preserve for about a week 🙂
Do these freeze well? If so how do you thaw or prepare after?
Absolutely! I would say thaw for 6 hours or overnight
