Ever heard of brown rice farina? Well I hadn’t until my good friend Sheereen introduced it to me! (check out her amazing paleo recipes at dieffs.wordpress.com). This is a yummy brown rice cereal loaded with nutrition, and is a great substitute for oatmeal because it works for people who are gluten free (like me). You can also purchase gluten free oatmeal, because the oat grain itself doesn’t contain gluten; however, some of them are processed in the same facilities which other glutenous grains are processed, and this causes cross contamination and could be risky to people who have severe gluten allergies. I would recommend opting for an oatmeal substitute such as brown rice farina or quinoa flakes/cereal, or purchasing a brand of oatmeal that has the certified gluten free stamp on it (Bobs red mill is a good brand). You can enjoy brown rice farina in any way you prefer! But this is how I enjoy mine 😉
Recipe:
1/3 cup organic brown rice farina (I used bobs red mill)
1/2 cup organic cage free egg whites (2 large egg whites)
1/3 cup organic unsweetened almond milk
A dash of ground cinnamon
A dash of nutmeg
1 organic stevia sachet
1 1/3 cups water
Bring 1 1/3 cups water to a boil over medium heat. When heat bubbles form, add brown rice farina and stir until it starts to thicken.
When thickened, reduce heat to low and add the remaining ingredients.
Stir farina until all ingredients are incorporated. Serve with fruit or toppings of choice. You can also have it by itself. I topped mine with strawberries, blueberries, almonds, unsweetened coconut shreds, and dark chocolate drops. Yummm!!
Very interesting information about the gluten-free oatmeal, addressing a problem I’ve been pondering since reading the book Wheat Belly recently. I will look out for that.
