Waffles are just as amazing as pancakes, except waffles are so much more fun to make, and of course to eat! Why would you get a waffle iron in your kitchen anyways? It’s not an essential item for your kitchen, but I say get one! You won’t regret it 😉
Recipe:
1 cup almond flour
1/4 cup coconut flour
1 large organic cage free egg and 1 egg white
1/4 cup unsweetened almond milk
3 tbsp dairy free dark chocolate chips (I used enjoy life)
2 tbsp organic raw cacao powder
2 stevia sachets (or 1 tbsp raw honey if you want it sweeter)
1/4 tsp pure organic peppermint extract (don’t use a lot, or your waffles will taste like chocolate toothpaste)
1/2 tsp gluten/aluminum free baking powder
Dash of sea salt
Combine all ingredients in a medium bowl and pour into a greased pre- heated waffle iron until ready. Top with toppings of choice or extra syrup depending on how sweet you want it.
