Quick and easy yummy dinner! Sometimes it’s hard to prep your meals with a busy schedule, but you still have to feed, so making quick and easy meals like these gets you out of the kitchen quicker and gets nourishment into your tummy faster 🙂
Recipe:
1 serving clean white tilapia
1 small eggplant (grilled)
5 fresh grape tomatoes
A handful of organic fresh baby spinach
Celery salt, curry and pepper for seasoning (1/8 tsp of each)
Preheat oven to 350 degrees and place seasoned tilapia on a non stick lightly greased baking dish.
Bake for 14 minutes until crispy golden brown colour forms.
Serve with grilled eggplant and vegetables.
