Okay, I know this isn’t exactly a mug cake, and that is because I couldn’t get the cake to sit up straight when I took it out of the mug. The mugs I own are quite narrow, so I used a ramekin dish instead. It still turned out phenomenal and the best part about it is that it’s sugar free! Plus is also serves as a great post workout meal.
Recipe:
1 small organic ripe banana
2 tbsp organic sunflower seed butter
1 tsp organic pure vanilla extract
1 organic cage free egg
1 stevia sachet
2 tbsp organic raw cacao powder (or any raw chocolate powder or choice. Hershey’s and Camimo are a good brand as well)
3 tbsp organic raw hemp seeds
Toss all ingredients in a food processor and pour in a microwave safe mug or ramekin bowl, and microwave for 2-21/2 minutes. If you choose to do it manually, mash banana with a fork and fold in other ingredients except chocolate powder. Lastly, fold in chocolate powder and stir slowly so that it doesn’t get messy and then pop in the microwave. When ready top with toppings of choice. You can enjoy these hot or cold. 🙂
